Rookworst is a Dutch sausage made from ground pork mixed with spices and salt, stuffed into pig casing and shaped like a horseshoe. It is derived from mettwurst, a lean pork sausage smoked over smouldering oak and beechwood chips.
To cook Rookworst, bring a pot of water to a simmer, add the sausage, and cook for 15 minutes. Serve sliced on mashed potatoes or enjoy it whole with mashed potato and cabbage or use it to enhance the flavour of soups
